摘    要:蛋白质是生物生长繁殖氮源的重要来源,蛋白质为复杂大分子物质。蛋白质被蛋白酶在生化反应中水解为多种α-氨基酸等,才可被机体吸收或被微生物利用。蛋白酶分解能力大小的指标是蛋白酶活力的大小。测定蛋白酶活力的大小是评判蛋白酶质量的关键,可用于指导生产(以酿酒生产为例)。同时通过控制蛋白酶活力的影响因素,完善蛋白酶生化反应环境。

Abstract:Proteins are complex macromolecules which are the major sources of organism's growth and propagation. Only amino acids hydrolyzed by protease in biochemical reaction can be absorbed by organism or be utilized by microorganisms. The protease activity is the indicator of protease digestion. The determination of protease activity is the key event of protease quality ealuation, as well as the production guidance. Through controlling the influence factors of protease activity, the biochemical reactive environment can be optimized.
