Abstract:The isolation of Anthocyanins was reviewed including thin layer chromatography, traditional liquid chromatography, high performance liquid chromatography and high-speed countercurrent chromatography. The identification involving chromatographic, spectral, mass spectroscopic and nuclear magnetic resonance spectroscopic technologies and bioactivities such as anti-oxidation, anti-cancer and anti-virus were also summarized.
