水杨酸处理对板栗冷藏品质及呼吸强度的影响

摘    要:为探索水杨酸(SA)处理对板栗贮藏品质的影响,以镇安红栗为实验材料,采用不同浓度(10、50、100μmol.L-1)水杨酸水浴处理3d,于0±1℃条件下贮藏,对板栗贮藏过程中的腐烂率、呼吸强度、水分含量、淀粉、可溶性糖、可溶性蛋白质和VC含量变化进行研究。结果表明,SA水浴处理可以极显著降低板栗在贮藏中的腐烂率。10、50μmol.L-1的SA水浴处理能降低板栗贮藏后期呼吸强度,较好保持板栗在贮藏期间的水分、可溶性糖和VC的含量,降低淀粉的降解速率;10μmol.L-1的SA较好保持了可溶性蛋白质含量。因此,10μmol.L-1和50μmol.L-1的SA可以在一定程度上延缓板栗品质的下降。

Abstract:Aiming at exploring effects of salicylic acid treatment on the quality of chestnut during storage.Zhen'an chestnut(Castanea mollissima Blume)were used as test materials.By water-curing treatments using salicylic acid of different concentration (10,50,100μmol · L~(-1))for 3d and storage at 0 ± 1 ℃, RH 65 %~85 %, the changes of rotten rate,moisture content, respiratory rate, starch content, soluble sugar, soluble protein and V_C content during the torage were measured on schedule. The results showed that the rotten rate was noticeably reduced with SA treatment during the storage.The respiratory rate was decreased by 10 or 501μmol · L~(-1) SA during anaphase storage.The moisture content、V_C and soluble sugar were kept well, at the same time, starch was slowed down after treating by 10 or 501μmol · L~(-1) SA. In addition soluble protein were kept well by 10μmol · L~(-1) SA. These results indicated that 10 or 50μmol · L~(-1) SA could inhibit the chestnut quality decreased to some extent.
