摘    要:白芸豆是一种药食两用食品资源,含有丰富的糖蛋白、多糖、多酚等成分,具体有抗氧化、降血糖、减肥等生物活性。迄今为止,国内外学者对白芸豆展开了较为深入的研究,目前已经从白芸豆中分离出了近百种化合物,其中以白芸豆糖蛋白的淀粉酶抑制活性最受关注,并且已有企业将白芸豆多种形式的减肥食品,受到广大消费者欢迎。本文从白芸豆的功能成分、生物活性及产品开发三个方面进行综述,以期为将来的健康机制研究及其产品开发提供一定的参考。

A Review of Functional Components, Bioactivities and ProductDevelopment of White Kidney Bean
Abstract:White kidney bean can be used for both dietary and medicine. It is rich in glycoproteins, polysaccharides, polyphenols and other bioactive components which provides antioxidant, hypoglycemic, weight loss effects. So far, scientists at home and abroad have conducted deeper research on white kidney bean, and nearly 100 compounds have been isolated from white kidney bean, among which the amylase inhibitory activity of white kidney bean glycoprotein has received the most attention, and there are already companies that have put white kidney bean in various forms of weight loss foods, which are welcomed by consumers. In this paper, we review the functional composition, biological activity and product development of white kidney bean in order to provide some reference for mechanism research and its product development in the future.
