摘    要:啤酒中双乙酰的含量是国家质量重要标准之一.当啤酒中双乙酰含量过高时,会产生不正常的口味,严重影响啤酒的质量.从双乙酰的代谢途径出发,探讨了双乙酰的形成和代谢机制,并阐述了在啤酒酿造过程中双乙酰含量的控制措施.

Abstract:Concentration of biacetyl in beer is an important criterion during beer brewing. While concentration of biacetyl in beer exceed a certain point, taste of beer should be bad. In this paper, from the metabolic way of biacetyl during beer brewing, formation and metabolic mechanism of biacetyl was discussed, and methods of concentration control of biacetyl were also expounded.
