浅谈餐饮业食品卫生标准

目的 为餐饮业卫生监督的标准化管理提供科学依据.方法 就我国餐饮业发展与食品安全概况、食品卫生标准在餐饮业中应用的意义、以及餐饮业关系进行分析,对我圆餐饮业食品卫生标准应用存在的问题进行讨论.结果 餐饮业适用的食品卫生标准较为广泛,可因餐饮业本身条件、规模、生产品种而适用相应的卫生标准.存在的问题是无完善的餐饮业基础卫生标准,无产品卫生标准,无完善、统一的餐饮业SSOP.结论 制定餐饮业产品卫生标准很有必要.
