| 摘 要： | 本研究对收集的3个混合发酵剂进行了分离、筛选,并通过测定其pH值、粘度和EPS产量,从中筛选出了两株高产EPS的乳酸菌。利用API细菌鉴定系统对这两株高产EPS乳酸菌的属性进行了鉴定,分别为乳酸乳球菌乳亚种和片球菌。

| Abstract: | Sixteen strains of lactic acid bacteria have been isolated and purified from the mixed starter, and the OD value and colonies measured after 12 hours liquid culture at 40℃. The pH, viscosity coefficient and content of exopolysaccharide of yogurt made from these lactic acid bacteria strains were assayed. Two strains of lactic acid bacteria of the highest yield of exopolysaccharide are screened. They are identified by API bacterial identification system as Lactococcus lactis subsp. Lactis and Pediococcus. |
