牛蒡中可溶性膳食纤维的提取

摘    要:将鲜牛蒡处理后,利用植物蛋白酶、糖化酶依次水解去除蛋白质和淀粉,抽滤得滤液,浓缩至原体积的1/3,用4倍体积95%的乙醇沉淀可溶性膳食纤维,抽滤,用丙酮、78%的乙醇洗涤滤渣,以除去其中的脂溶性物质,烘干即得可溶性膳食纤维.结果表明植物蛋白酶的最佳工艺条件为加酶量8%、温度50℃、时间3h、pH7;糖化酶的最佳工艺条件为加酶量1.0%、温度60℃、pH4.0~4.6、时间1h;牛蒡中可溶性膳食纤维提取率为15.43%.该产品呈浅黄色,感官形状良好.

Abstract:Burdock was used as the raw materials in this paper. Protein and starch were hydrolyzed by plant protease and glucoamylase after pretreatment the burdock. Filter liquor was concentrated about one third. Soluble dietary fiber were precipitated by four times 95% ethanol and then filter residue were washed to remove fat-soluble substances by acetone and 78% ethanol. Baking dry was the last step. The results showed that the optimum extraction conditions of plant protease were 8% plant protease, 50 ℃, 3 h and pH 7. The optimum extraction conditions of glucoamylase were 10% glucoamylase, 60 ℃, lh and pH from 4.0 to 4.6. The rate of soluble dietary fiber extracted from burdock was 15.43%. The product's color was light yellow and shape was pleasant.
