肉类食品清洗解冻装置的研究进展

摘    要:解冻与清洗一直是肉类食品加工工艺中非常重要的环节,解冻的好坏直接影响肉类的品质,而清洗的干净与否直接影响食品卫生指标。介绍了近年来清洗装置与解冻装置的研究现状和进展,针对清洗装置结构单一,浪费水源,清洗效果不佳,解冻装置设备复杂,解冻时间长或解冻质量差等问题进行了深入研究。

Abstract:Thawing and cleaning has been a very important part of food operation, especially meat processing technology, the quality of meat directly affects the quality of the thaw, and clean or not directly affect the food hygiene indicators. This paper introduces the research status and progress of cleaning device and thawing equipment in recent years, we found that the cleaning device's structure is single, and it always waste water, product poor cleaning effect; thawing equipment is complex, need long time to thaw meat and the quality of thawing is poor. In view of the above problems, we have carried on the thorough research to it.
