| 摘 要： | 金华豆豉是中国酱文化历史沉淀的一部分,属于传统民间调味品。针对当前热议传统民间食品的背景下,本文把历史文献中有关金华豆豉记载的信息作为研究对象,进行评析,挖掘出其调味、药用、文化交流等价值,并提出传承对策的思考。

| Abstract: | As a part of historical precipitation of Chinese sauce culture,Jinhua black bean sauce belongs to traditional folk spice.Under the background of the hot topic of traditional folk food,this paper makes a study of historical data about Jinhua black bean sauce,finds out its seasoning,medicinal and cultural values,and then explores the countermeasures for inheritance. |
