盐析法提取柚子皮果胶工艺的研究

摘    要:研究了用盐析法从柚皮中提取果胶的工艺条件。结果表明,盐析法提取柚皮果胶的最佳工艺条件为提取液pH值1.5,提取温度90℃,提取时间50min,料液比1∶25(g∶mL),饱和明矾溶液与水解液体积比1∶1,盐析温度60℃,盐析时间50min,盐析pH值4.0。在此工艺条件下,果胶得率为18%。

Abstract:The extraction condition of pectin from shaddock peel was studied with salting-out method. As a result, the optimal extraction condition was: extraction solution pH 1.5, extraction temperature 90℃, extraction time 40 min, solid to liquid ratio 1∶25(g∶ml), alum saturated solution to hydrolysate ratio 1∶1, salting-out temperature 60 ℃, salting-out time 50 min, salting-out pH 4.0. Under such condition, the pectin yield was 18%.
