大曲中总酸和氨基酸态氮的连续滴定

摘    要:对目前大曲酸度和氨基酸态氮的测定方法进行了改进,在滴定过酸度的试样中直接加入中性甲醛溶液以继续滴定试样中的氨基酸态氮。对同一曲样分别用两种方法进行对照试验表明,改进后的方法与原方法测得的结果一致。在实际测定工作中,连续滴定法只需配制一种浓度的氢氧化钠标准溶液,并且每个曲样的测定由原来的4个平行样减少到2个平行样,从制备样液到一次性测定2个理化指标总共只需40min左右,与原方法相比更简便省时。

Successive titration of total acid and amino acid nitrogen in Daqu

Abstract:The method for acidity and amino acid nitrogen determination in Daqu was improved, in which the respective titration item was combined into a single one measurement, that is, neutral formaldehyde solution was directly added into the acidity-titrated sample to continue the amino acid nitrogen titration. The comparative experiment on the same sample showed that the results were completely consistent with the original method. In the actual determination, only one concentration of sodium hydroxide standard solution needed to prepared, the determination of each sample needed only two parallels instead of four, and two physicochemical indexes could be determined successively in about 40 min. The improved method was more convenient with time conservation.
