鲜食玉米的各向异性研究

摘    要:分别鲜食玉米的不同部位(上部、中部、下部)和方向(轴向、径向)进行穿刺和TPA试验(Texture Profile Analysis又称为两次咀嚼测试),比较了各测点相应参数的差异性,并对二因素(部位和方向)做了方差分析。结果表明:沿经线方向差异性不明显,沿轴线方向存在明显差异;且部位对硬度、内聚性和回复性3个参数有显著影响,而测点对各参数没有显著影响。

Abstract:Puncture Test and TPA(Texture Profile Analysis)Test of the different parts (the top, the middle, the root) and different directions (the axes, the radial) on the fresh-eating corn were evaluated in this paper, corresponding parameter anisotropic in each testing part and ANOVA analysis were made for two factor(part and direction).It indicates that anisotropic in the axes was marked, while the radial not; rigidity, cohesion, reversion were influenced markedly by different parts, each parameters were not influenced markedly by testing parts.
