酵母发酵滤液促进红曲红色素增产的初探

摘    要:红曲红色素自古以来是人们食品着色的重要原料。据国外文献报道:将酿酒酵母的发酵滤液加入到红曲霉的培养液中,可以促进红色素增产;通过试验确证了酵母滤液的确可以促红曲红色素增产,其水溶性红色素产量最高可提高91.25%。

Abstract:The red pigment fermented by Monascus sp. is an important raw material for food coloring from ancient time. It's reported that pigment production was increased when a Monascus sp. was cocultured with Saccharomyces cerevisiae; and the hydrolytic enzymes produced by S. cerevisiae, such as amylase and chitinase were thought to be the effectors. It is confirmed by our research that S. cerevisiae culture filtrate can enhance water-soluble pigment production of Monascus purupureus up to 91.25%
