摘    要:作为一种现代商业组织形式和经营制度,连锁经营与传统文化的传承并无紧密的关联性。富有深厚文化底蕴和人文内涵的淮扬菜,一直具有很高的社会影响和业内地位,但其企业规模和产业效应却一直处于较低的发展水平。淮扬菜要实施连锁经营,必须要在饮食文化体系建设和餐饮业态分工方面形成科学认识,文化传承视阈下的餐饮企业需在传统文化要素的甄别、连锁经营区域的优化、现代连锁体系的建设等方面,形成连锁经营的科学路径。

Abstract:As a modern form of commercial organization and operation institution, chain operation has no close relevance to traditional culture heritage. Rich in cultural deposits and humanity connotation, Huaiyang cuisine has long possessed high status in the society and in the industry but remained low - level development in industry scale and productivity. The implementation of chain operation involves scientific knowledge of cuisine culture system construction and type of operation division. The differentiation of traditional culture factors in the respect of culture heritage, regional optimization of chain operation and modern chain system construction may access to the formation of scientific path of chain operation.
