电子鼻和电子舌在食品分析中的应用

摘    要:电子鼻和电子舌作为嗅觉传感器技术,以其客观性、可靠性和重现性等优点在食品分析中得到了广泛的应用。本文在介绍电子鼻和电子舌的工作原理及基本组成基础之上,就其在国内外食品品质监控、食品评价、食品安全检测方面的一些应用进行了综述,以期对提高我国食品分析提供一定的参考。

Abstract:As new olfactory sensor technologys, electronic nose and electronic tongue has been widely used because their objective, reliability and reproducibility.This review introduce the principles and compositions of them and their application in quality monitoring, food evaluting, analysis food safety etc.The purpose of this paper is to provide some useful reference for the future study.
