复凝聚法制备明胶/ES香精微胶囊

摘    要:以古龙香精为芯材,明胶和柔软剂二硬脂酰胺乙基环氧丙基醋酸铵(ES)为壁材,在搅拌条件下,通过复凝聚方法制备了香精微胶囊。探讨了戊二醛用量、ES与明胶质量比及ES的质量分数对香精微胶囊形态的影响。用TEM、SEM和激光粒度分析仪对香精胶囊的粒子尺寸及分布、形态进行了表征。结果表明,戊二醛用量为明胶质量的2.2倍、ES与明胶质量比为1:0.3、ES的质量分数为1.5%时所制备的香精微胶囊形态规整、粒径分布较窄、干态粒径小于1μm。所制备的香精微胶囊具有良好的缓释性能,80℃烘干7 h仍然具有较高的香精残余量。所制备的香精微胶囊的载香量为41.1%,包埋率高达95.3%。

Abstract:Under stirring condition,the essence microcapsules were prepared for the first time through complex coacervation method by using gelatin and softener di(stearylamidoethyl) epoxypropyl ammonium acetate(ES) as wall materials.The effects of the dosage of glutaraldehyde,the mass ratio of gelatin to ES,and the concentration of gelatin on the shape,size and distribution of microcapsules were studied and the products were characterized by means of TEM,SEM and particle size analyzer.The results show that the essence microcapsules of regular spherical shape and uniform particle size distribution were obtained when the mass ratio of glutaraldehyde to gelatin and that of ES to gelatin were 2.2:1 and 1:0.3,respectively,and the mass fraction of ES was 1.5%.And the mean size of dry essence microcapsules was less than 1 μm.Slow-release performance test shows that the essence microcapsules had excellent slow-release performance.UV-Vis test shows that the essence-loading rate and encapsulation efficiency of Cologne essence microcapsules were 41.1% and 95.3%,respectively.
