脂溶性茶色素的提取及其稳定性的研究

摘    要:以乙醇为溶剂从茶叶中提取脂溶性茶色素,研究了温度、pH值、金属离子、氧化剂、还原剂、暗处存放和自然光下存放对脂溶性茶色素稳定性的影响。结果表明:温度对脂溶性茶色素的稳定性影响不大;弱酸性条件(pH=4.8~6.6)下,脂溶性茶色素的稳定性较好;K+、Cu2+、Zn2+、Mg2+、Al3+对脂溶性茶色素的稳定性影响较小,Fe3+、sn2+对脂溶性茶色素的稳定性影响明显;氧化剂对脂溶性茶色素的稳定性有影响;还原剂对脂溶性茶色素的稳定性影响不大;暗处存放对脂溶性茶色素的稳定性影响不大;自然光下存放对脂溶性茶色素的稳定性影响很大。

Abstract:Fat-soluble tea pigment was extracted from tea using ethanol as solvent. And the effects of ternperature, pH value, metal ions,oxidizing agent, reducing agent,dark and natural light on the stability of fat-sol- uble tea pigment were investigated. The results indicated that effect of temperature on the stability of fat-solu- ble tea pigment was unlikely,and the.stability was better in weakly acidic condition (pH = 4.8-6.6). Effects of K+ , Cu2+ , Zn2+ , Mg2+ , Al3+ on the stability of fat-soluble tea pigment were unconspicuous, and effects of Fe3+ , Su2+ were clear. Effect of oxidizing agent on the stability of fat-soluble tea pigment was influential,and that of reducing agent was not distinct. The storage in dark had a little effect on the stability of fat-soluble tea pig- ment,but the storage in natural light had a lot.
