罗非鱼鱼鳞粉直接酶解制备胶原蛋白的工艺研究

摘    要:研究了罗非鱼鱼鳞粉直接酶解制备胶原蛋白的工艺条件。以胶原蛋白提取率为考核指标,采用单因素实验和正交实验确定最佳酶解条件为;100目罗非鱼鱼鳞粉质量分数7%、酶解温度65℃、酶解pH值8.5、酶加量0.05AU·g-1、酶解时间2.0h,在此条件下,胶原蛋白提取率迭95.79%。

Abstract:The preparation of collagen by enzymolysis of tilapia scale powder with alcalase was studied in this paper. With extraction rate of collagen as index,the optimum enzymolysis conditions were obtained through single factor experiment and orthogonal experiment as follows.the mass fraction of 100 mesh tilapia scale pow- der was 7% ,enzymolysis temperature was 65 ℃ ,enzymolysis pH value was 8.5,alcalase amount was 0.05 AU ·g-1, enzymolysis time was 2.0 h. Under above conditions,the extraction rate of collagen reached 95.79 %.
