Abstract:As a by-product of corn processing,zein can form biological active peptides under the action of enzymes,which can be used in the process of medicines.However,the conventional enzymatic hydrolysis process has disadvantages such as low utilization rate of enzymes,low product conversion rate,and long time-consuming.This article studied the effect of enzymatic hydrolysis on the antioxidant and ACE inhibitory activities of zein hydrolysates.The results showed that the best degree of hydrolysis of zein could be obtained under the conditions of ultrasonic power 200W,the ultrasonic time 40min,and the material-to-liquid ratio 1∶100.Ultrasound-assisted enzymolysis greatly reduced the particle size of zein hydrolysates,improve the uniformity of zein hydrolysates.After ultrasound-assisted enzymolysis,the soluble protein content was 0.89mg/mL,reducing power was 0.007,sulfhydryl content was 1.354μmol/g,DPPH scavenging ability was 41.39%and ACE inhibitory activity was 63.97%.Compared with the control,these values were increased by 345%,75%,41.63%,247.81%and 53.63%respectively.This study provided a scientific basis for the research and utilization of the zein.
