| 摘 要： | 考察了姜辣素在油脂中的抗氧性能，通过测定体系的过氧化值(POV)和酸价(AV)及其随时间的变化情况，获得了姜辣素抗氧过程的动力学方程，并探讨了温度、环境介质等因素对姜辣素抗氧效果的影响。

| Abstract: | The antioxidation of oleoresin has been studied in the oil and fat. The chemistry dynamics equation is obtained by measuring the change of the systematic POV,AV with the time.Moreover,the influences of temperature and surrounding medium have been studied. |
