| 摘 要： | 二十八烷醇作为一种具有抗疲劳活性的功能性物质,是一种天然存在的长链饱和一元脂肪醇。针对二十八烷醇熔点高及水溶性差的特点,开发了一种水分散型乳化液,并对不同乳化剂、稳定剂及乳化工艺对二十八烷醇乳化液稳定性的影响进行了研究,确定了二十八烷醇乳化液的最佳配方及工艺,并将其添加到运动饮料配方中,研制出一种均匀稳定的抗疲劳功能性运动饮料。

| Abstract: | Octacosanol, as an active anti-fatigue functional substance, is a concentrated form of the saturated unique long-chain fatty alcohol exist in the nature. Aimed at the problem of higher melting point and insoluble in water, this paper produced a water-based emulsion and studied the emulsifying stabilization of octacosanol affected by emulsifiers, stabilizer and emulsifying technology. The optimum recipe and operation process of octacosanol emulsion was determined, and it was also added to a ingredient of sport drink to get an even and stable sport drink with anti-fatigue function. |
