摘    要:综述了近 10年来虾青素结构、功能及应用方面的研究成果与进展。虾青素有多种结构形式 ,可淬灭单线态氧、清除自由基、防止或终止因单线态氧和自由基引起的链式反应。人类的衰老过程及许多疾病与自由基促进疾病发生和抑制人体自身防御、修复能力的作用相关。目前 ,虾青素主要用作鱼类和家禽饲料的添加剂 ,对鱼类、家禽的繁殖和健康等都有益

Abstract:This article reviews the research progress of astaxanthin in the last 10 years.Astaxanthin exists in various forms and has chemical features to protect from oxidative damage by quenching singlet oxygen and dissipating the energy as heat,and scavenging radicals to prevent or terminate chain reactions.Many human diseases and degenerative processes have been linked in a way to the action of free radicals,which may enhance the progression of diseases and may inhibit the body's own defense and repair processes.Astaxanthin is now primarily used as a colorant added to feeds for fish and poultry to benefit their reproduction and health.
