红枣黄酒的研制

摘    要:为利用红枣的营养价值及保健作用,将红枣和粳米作为主要原料酿造黄酒。通过糖化发酵、压榨、煎酒、陈酿、过滤及调配等工序制得红枣黄酒,其中在压榨分离的清酒中添加蜂蜜作为澄清剂和营养调和剂。该酒呈橙黄色,清亮透明,具有黄酒和红枣特有的复合香气,口味醇和、绵长,是一种低酒度、高营养、具有保健作用的黄酒。

Abstract:Chinese date has rich nutritional value and health - care function. With Chinese date and polished round - grained rice as raw materials, after a whole process of saccharification fermentation, squeezing, boiling, brewing, filtering and mixing, yellow wine with Chinese date is produced, Bee honey is used as clarifying agent and nutritional compounding agent, and then is added into this yellow wine. With a clear orange yellow color, it has a compound flavor with yellow wine and Chinese date. With low alcohol spirits, this yellow wine is rich in nutrition and has health - care function.
