专用绿豆粗粉丝的制备

摘    要:"粉丝千张包子"是江南地区流传百年的名特产.粉丝以绿豆淀粉为原料,不添加任何辅料,经打浆,揉面、胀发等工艺制成.粉丝为粗粉丝,直径一般为5~6mm,且产品不经干燥处理,鲜湿状态下直接进行烧煮;鲜粗粉丝耐煮时间长达4h,煮后仍保持外型圆润,韧性好,口感细腻的品质.

Abstract:As a best-known special local product in the lower Changjiang relley,Vermicelli Qianzhangbaozi is made from mung-bean amylum, no additives,with the technics of slurring,rubbing,swelling.Coarse vermicelli which after boiled for 4 hours in fresh and moist state without being dried,is capable of keeping such qualities as smooth and round appearance,high tenacity,nice chewy texture.
