摘    要:啤酒糟是微生物发酵的良好基质,利用微生物发酵啤酒糟的用途非常广泛.啤酒糟的再利用,有利于保护生态环境和节约资源.综述了近年来国内外啤酒糟在酶制剂、动物饲料、活性物质、食品添加剂方面的发酵应用.

Abstract:Brewer's spent grain was good resource for microorganism fermentation,which was widely utilized.Recycling brewer's spent grain was good for protecting ecological environment and saving resources.The applications of brewer's spent grain in enzyme preparation,animal feed,active substances and food additives from home and abroad were summarized.
