不同感官等级白酒基酒的相似度研究

摘    要:为了使白酒等级的鉴别与评定更为客观化、数据化,建立了3类不同感官等级1年陈白酒基酒的GC指纹图谱.利用中位数法构建了不同等级基酒的标准指纹图谱,分别采用相关系数和夹角余弦评价了各酒样色谱图谱与标准指纹图谱之间的相似度.结果表明,按夹角余弦和相关系数法,不同感官等级的白酒基酒之间相似度差别较大,该法可用于不同感官等级白酒基酒的鉴别.

Abstract:Fingerprints of three different sensory levels of 1 year base Luzhou-flavor liquor was established by GC for more objective and figurative identification and evaluation of Luzhou-flavor liquor.Standard fingerprints of base Luzhou-flavor liquor were established by median values.Similarity of the fingerprints of samples to standards was calculated by using correlation coefficients and angel cosine.The results showed that the similarity of Luzhou-flavor base liquor with different sensory levels was significant...
