基于工学结合的“餐饮服务与管理”课程教学设计

摘    要:在"餐饮服务与管理"教学中可根据餐饮服务与管理工作岗位的需求,以餐饮企业典型工作任务及工作过程为逻辑主线组织教学内容。其课程教学以典型工作任务为载体,按照各个工作阶段的内容创设学习情境,并建立新的技能考核评价指标对学生进行综合实践考核。

Abstract:In the food service and management of teaching in food service and management in accordance with job requirements,the teaching content to catering enterprises organized into tasks and work processes typical for the logic thread.The teaching of "the typical tasks" as the carrier,in accordance with the contents of the creation of various working stages of learning environment,and build new skills assessment evaluation of the students comprehensive practice examination.
