摘    要:为了对扇贝加工副产物进行高值化利用,采用中性蛋白酶,分别以变性(100℃,10 min)和未变性虾夷扇贝生殖腺匀浆为底物,经50℃酶解3h后制备不同的生殖腺水解液.结果表明,中性蛋白酶水解雌性虾夷扇贝生殖腺的效果优于雄性生殖腺,并且虾夷扇贝生殖腺经变性处理后,水解度和肽得率得到显著提高.与未变性处理组雌性虾夷扇贝生殖腺...

Abstract:Both raw and heat denatured gonad homogenate from Patinopecten yessoensis were hydrolyzed with neutral proteinase at 50 ℃ for 3 h to prepare peptides.The hydrolytic efficiency of female scallop gonads is higher than that of male scallop gonads.The hydrolytic degree and yield of peptides were increased by 36.16% and 94.78% respectively when the denatured female scallop gonads were used.The narrow band can be obtained when the female denatured gonad hydrolysates were separated by Sephadex G-25 gel filtration chromatography,which has some reducing power.The molecular weight distribution of 74.78% peptides in female denatured gonad hydrolysates was ranged from 0.25 to 5 ku.The results suggested that the peptides with reducing power can be prepared by hydrolysis of female denatured gonad with neutral proteinase.
