摘    要:窖泥是浓香型原酒质量的前提和关键,探索使用有机物人工老窖泥的培养代替无机物人工老窖泥的培养;结果证明使用有机物人工老窖泥能够逐步提高浓香型原酒中己酸乙酯含量,达到增己降乳提高原酒质量的目的。

Abstract:Cellar mud is the precondition and the key of the quality of Luzhou style liquor. The investigation of using organic man-made cellar mud instead of inorganic one was carried out. The results approved that the use of organic cellar mud gradually increased the content of ethyl hexanoate, which meet the needs of high quality liquor with high ethyl hexanoate level and low ethyl lactate level.
