多轮底酒生产方法初探

摘    要:对多轮底酒进行了不同层次留底,不同回酒量和已酸菌液的生产试验,结果表明,留2层底上怪回酒15kg和已酸菌液45kg效果较好,试验多产特级酒11560.6kg,甲级酒11510kg,乙级酒2861kg,创经济效益28.8万元,但平均出酒率较车间出酒率低4%,有待进一步研究。

Abstract:An experiment on remaining bottom fermenting grain of different layers,different amount of liquor returning and caproic acid-producing bacterium for multi-fermentation substrate liquor was carried out.According to the experiment,remaining two layers of the bottom fermenting grains, the first layer returning liquor 15kg and caproic acid-producing bacterium liquid 45kg,the good results were achieved in the experiment,and the productions of special grade liquor were 11560.6kg,the first grade liquor 11510kg and the second grade liquor 2861kg higher than that of normal. The economic benefit of 288,000 yuan was abtained. But the average yield of liquor was 4% lower than that in normal workshop.It needs to study in a deep-going way.
