Abstract:In the production of trans-permutation of Luzhou-flavour Daqu liquor,0.6 of TH-AADY and 0.6 of saccharification enzyme according to the material was added into the fermenting grain.The fermentation was stable. The yield of liquor was increased by 4.2%.At meantime,the quality of liquor was keeped constant and the trans-permutation was successfully realized.
