摘    要:提高扳倒井酒质量的技术措施有:提高窖泥质量,优化窖泥配制,养护窖泥;以多粮为原料酿酒,以多粮高温制曲;科学的工艺控制(即“一低,二长,三高,四适当”);产品进行分级入库,合理贮存;科学合理的酒体设计;研制、应用调味酒;对微量成分进行量化控制。

Abstract:The technical measures to improve Bandongjing liquor quality included the improvement of pit mud quality,the optimization of pit mud preparation,maintenance of pit mud,multiple kinds of grains used in liquor production,starter-making by multiple grains and high temperature,scientific technical control("One Low,Two Long,Three High,and Four Adequate"),storage of product liquor according to liquor quality and appropriate liquor storage,scientific liquor body design,development and proper use of flavoring liquor,and the quantizing control of liquor microconstituents.(Tran.by YUE Yang)
