酶水解法生产婴幼儿配方奶粉新技术研究进展

摘    要:以牛乳为主要基料的婴幼儿配方奶粉会使婴幼儿食用后出现消化不良和过敏反应,主要是母乳与牛乳蛋白质组成不同而引起的。为了改善婴幼儿配方奶粉对婴幼儿产生的不良问题,国内外许多研究者利用酶水解法对牛乳蛋白进行改性,国外目前已有水解牛乳蛋白产品。本文介绍了我国工业化酶法水解牛乳蛋白还存在的问题及水解蛋白在婴幼儿配方奶粉中的应用阻力。

Abstract:Infant formula milk powders is the main infant food of simulation human milk ,but it could affect digesting hardly and hypersusceptibility on some infants, which is related to the difference of protein component of bovine milk and human milk. The approach of hydrolyzing bovien protein with enzyme to resolve these questions is applied in large scale production in some countries.There are some questions in our country if using this approach.The application of protein hydrolysate to infant formula milk powders is difficult .
