蔗糖酯的研究进展

摘    要:蔗糖酯是由亲水的蔗糖和亲油的脂肪酸组成的表面活性剂。其特有的性质使之能广泛应用于食品、医药、化妆品、洗涤剂等行业。作者论述了蔗糖酯的各种化学合成、分离提纯方法及其研究进展。
