| 摘 要： | 测定了福建省地产47份瓶装啤酒中双乙酰含量，贮存1－3个月后合格率为87．2％－89．4％，存放3个月后，较1个月后双乙酰含量有较大的回升，回升的样品抽查样品总数的38．3％，可以认为乙酰在贮存过程中的回升是导致出厂啤酒双乙酰超标准的主要原因。

| Abstract: | The biacetyl of 47 bottled beer samples was analyzed,manufactured by 37 factories in Fujian Province,China.There was no reasonable difference between the storage period of a month at room temperature and three months in conformity percentage of the samples,with a percentage of 87 2%,89 4%,respectively.But the 38 3% percent samples increased their biacetyl concentration after the storage of three months.The biacetyl exceeding the tolerable limits may result from the rise again in the biacetyl concentration in the bottled beer during the storage. |
