摘    要:综述了指纹图谱技术在果酒检测中的应用。指纹图谱技术能够客观、准确、快速、安全测定果酒的香气和非挥发性物质。主要介绍气相色谱、液相色谱、质谱等对果酒的分析,同时简单介绍了全二维气相色谱和超高液相两种最新检测技术。指纹图谱技术对建立科学合理的控制和评价果酒质量、防伪等方面的研究提供了理论依据。

Abstract:The application of fingerprint technology in fruit wine was reviewed.The technology could determine the odors and the non-volatile substances objectively,accurately,rapidly and safely.Gas chromatography(GC),high performance liquid chromatography(HPLC)and mass spectrometry(MS)analysis of the fruit wine were mainly introduced.At the same time,two new technology methods,comprehensive two-dimensional gas chromatography(GCxGC)and ultra performance liquid chromatography(UPLC)were introduced.The technology could establish a scientific and rational method to control and evaluate the quality of the fruit wine.
