摘    要:为研究不同保鲜剂对马粪海胆(Hemicentrous pulcherrimus)冷藏过程中品质变化的影响,将新鲜马粪海胆生殖腺分别置于壳寡糖、海藻糖和EDTA-2Na溶液中进行浸泡处理,以感官评定、细菌总数(TVC)、挥发性盐基氮(TVB-N)和pH为指标,对其(4±1)℃贮藏过程中的品质变化进行测定。结果表明,经3种保鲜剂处理后,海胆贮藏过程中的品质变化都得到了不同程度的改善,其中壳寡糖的品质保持效果最为明显,表现为固形效果的增强(P<0.05)和对TVC(P<0.01)及TVB-N(P<0.01)增长的有效控制,与对照组相比,可延长货架期4~5d;海藻糖和EDTA-2Na对海胆品质保持效果较为一般,可延长货架期1~2d。

Abstract:To determine the effect of different antistaling agent on changes of storage quality of sea urchin(Hemicentrous pulcherrimus),which was processed with chitosan oligosaccharide,trehalose and EDTA-2Na,were evaluated through a systematic study of sensory quality,the total bacterial count,total volatile base nitrogen(TVB-N) and pH during storage in(4±1)℃.Results indicated that the storage quality of sea urchin gonads processed with all the three antistalingagent were improved in varying degree,while sea urchin gonads processed with chitosan oligosaccharide had a harder texture(P<0.05)and better controlled rise of TVC(P<0.01) and TVB-N(P<0.01) values,with extended shelf life of 4~5 days;those processed with trehalose and EDTA-2Na had slightly improved storage quality with extended shelf life of 1~2 days.
