乳酸乳球菌富硒及其硒多糖抗氧化活性研究

摘    要:对乳酸乳球菌富硒工艺进行优化以及对其最优条件下提取的硒多糖抗氧化活性研究,结果表明:接种量、培养时间、亚硒酸钠浓度是影响乳酸乳球菌富硒量的主要因素;当接种量8%,培养时间24h,亚硒酸钠浓度14μg/mL,温度37℃,pH6.6时,乳酸乳球菌的有机硒转化率为59.87%。当最优条件下提取的硒多糖浓度达2mg/mL时,硒多糖对羟自由基和超氧阴离子的清除率为78%和59%,较同等条件下多糖的清除率分别提高了19%和18%。

Abstract:Study on Se-enriching conditions of polysaccharides produced by Lactococcus lactis subsp.Lactis and the scavenging capacity of ·OH and O2-· of Se-enriched polysaccharides which were obtained under the optimal conditions,the results showed that initial pH,inoculation amount,incubation time,concentration of sodium selenite were the main factors for Se-enriched polysaccharide production.When inoculation amount 8%,incubation time 24h,concentration of sodium selenite 14μg/mL,cultivated temperature 37℃,pH6.6,Se-enriching ratio was 59.87%.When the concentration of Se-enriched polysaccharides which were obtained under the optimal conditions was 2mg/mL,the scavenging capacity of ·OH and O2-· of Se-enriched polysaccharide were 78% and 59%,comparing with the polysaccharides under the same conditions,they increased by 19% and 18% respectively.
