摘    要:分子蒸馏因其具有真空度高、受热时间短、蒸馏温度低、分离效果好等特点而广泛应用于食品行业。综述了分子蒸馏的基本原理及其在食品行业中的最新国内外研究及应用现状。

Abstract:Based on its high vacuum degree,short heating time,low temperature,good separating effect,molecular distillation is widely applied in food industry.The basic principle of molecular distillation and its recent research situation,as well as applications in food industry was introduced.
