摘    要:亚硝酸还原酶(nitrite reductase,NIR)是陆地上氮元素循环过程中降解亚硝酸盐的一个关键酶,能把亚硝酸盐还原生成NO或NH4+。综述了国内外研究者从不同方面对NIR的研究,论述了NIR的组成结构、工作机理及反应特性,总结了产NIR菌株及NIR在肉制品中的应用,并对NIR的研究及应用进行了展望。

Abstract:Nitrite reductase(NIR) reduces nitrite to NO or NH4+,this is a key step in the nitrogen cycle.The advances in study on NIR,including the structure,catalysis mechanism and the response characteristic were reviewed.Application of NIR and denitrifying bacteria in meat products were summarized.Application and research prospects of NIR in the future were also presented.
