摘    要:肉制品工业的发展离不开添加剂的应用。肉制品加工中应用的添加剂种类丰富,包括防腐剂、抗氧化剂、护色剂、增香剂、乳化剂、水分保持剂、增稠剂等。在综述了肉制品加工中常用添加剂的性状、作用机理、使用方法及注意事项的基础上,还对肉制品加工添加剂的应用现状和最新的研究进展做了一定的归纳和总结,为肉制品加工中添加剂的选择、使用以及新产品开发提供有益参考和指导。

Abstract:There is a close relationship between the application of additives and the progress of meat industry.The additives which are used in meat processing are various,including preservatives,antioxidants,color retention agents,flavor enhancers,emulsifiers,water retention agents and thickeners.The additives that are commonly used in meat processing and the properties,the mechanisms of action,the ways of use and the precautions of them were introduced and illustrated.Meanwhile,the applications and the latest research progresses of them was also summarized,which provided a useful recommendation and guidance of the choosing,using and developing of additives in meat processing.
