摘    要:为研究松花粉中脂肪酶的最适反应条件,考察了温度(℃)、pH、底物、金属离子等因素对其酶活的影响。通过脂肪酶的催化水解作用,以95%乙醇终止反应,测定其酸价,进而求得酶活,并选择出脂肪酶的最适反应条件。结果表明,最佳反应条件为:温度35℃,pH7.4,底物为三丁酸甘油酯,Ca2+、Fe3+、Mg2+、Fe2+会提高脂肪酶活力。

Abstract:In order to study the optimal conditions of lipase in Pine Pollen,we investigated some influence factors,including temperature(℃),pH,substrate,metal ions,and so on.The lipase activity was obtained by assaying of the acid value after ending the reaction with 95% ethanol and the optimal conditions were determined.The results showed that the optimum temperature and pH of lipase were 35℃ and 7.4 respectively,the substrate was glyceryl tributyrate,and Ca2+,Fe3+,Mg2+,Fe2+ enhanced the activity of lipase.
