富锌稻米营养成分分析研究

摘    要:以富锌稻米、东北香米和泰国香米三个品种(系)为材料,对其营养成分(如水分、灰分、蛋白质、直链淀粉、微量元素等)进行了测定,同时对三者进行了比较与分析。结果发现,富锌稻米的主要营养成分含量与东北大米和泰国香米相差不大。而在微量元素的比较中,富锌稻米的锌含量比东北香米和泰国香米分别多了近两倍。此外,本实验还对富锌稻米的氨基酸含量进行了测定与比较,结果发现,无论在人体必需氨基酸含量还是总氨基酸含量上,富锌稻米比东北大米和泰国香米都高,由此表明富锌稻米具有更好的营养价值。

Analysis of the nutritional components of zinc-rich rice

Abstract:Three varieties(lines)of zinc - rich rice,northeast rice and Thai rice were used to detect the nutrient compositions(such as moisture,ashes,protein,amylose,micronutrient elements,etc). Meanwhile the difference of composition contents among three cultivars were also compared and analyzed. The results showed that the difference of major chemical composition between zinc - rich rice and northeast fragrant rice and Thai rice was not significant. As for the micronutrient elements,the zinc content of zinc - rich rice was higher than that of the northeast fragrant rice and Thai rice and was nearly twice as much. In addition,amino acid contents of zinc - rich rice were also determined. The results showed that total amino acid and essential amino acids contents of zinc - rich rice were higher than those in northeast rice and Thai rice. Therefore,zinc - rich rice had better nutritional value than the other two cultivars.
