纤维素酶法制备高品质红薯渣膳食纤维条件的研究

摘    要:以红薯渣为原料,对纤维素酶法制备高品质膳食纤维的条件进行实验研究。对影响可溶性膳食纤维含量的因素进行单因素实验,在此基础上进行正交实验,得到纤维素酶制备高品质红薯渣膳食纤维的最佳条件为:温度45℃,pH5,纤维素酶的添加量20U/g,酶解时间2.5h。在此工艺条件下,水溶性膳食纤维的含量由原来的4.26%提高到20.91%。

Abstract:An experimental study for preparation of high-quality dietary fiber made from sweet potato residue by cellulose enzyme was carried out.An orthogonal test was designed based on the single factor experiment which effect the yield of the soluble dietary fiber.The optimal conditions for preparation of high quality dietary fiber were obtained,such as the temperature was 45℃,pH5.0,the quantity of cellulose enzyme was 20U/g,and action time 2.5h.Under these conditions,the yield of soluble dietary fiber increased from the original 4.26% to 20.91%.
