食叶红紫苏不同生育期主要营养成分分析研究

摘    要:对食叶红紫苏不同生育期主要营养成分分析研究结果表明:食叶红紫苏营养丰富,矿物质含量高,各营养成分之间存在一定的相关性,大多呈现正相关关系,各营养成分随生长时间规律性变化明显;苗期各营养成分含量总体相对较低,初花期最高,坐果期和成熟期除粗纤维外,其他营养成分含量有相对降低的趋势;初花期水分含量为79.23%,叶片干基粗蛋白、粗脂肪、粗纤维含量分别为104.81g/kg、69.42g/kg和82.60g/kg;Zn、Fe、Ca含量分别为23.46mg/kg、1160.60mg/kg和63.56mg/kg,β-胡萝卜素为65.41mg/kg。建议在初花期集中采收叶片食用;作为脱水蔬菜发展。

Abstract:The main nutrition ingredients of edible leaf red perilla were studied during different growth stages. The results showed that the edible leaf red perilla had richer nutritions and higher mineral contents while positive significant differences had been extended. With the growth stages, the nutrition ingredients contents demonstrated the regular changing. Overall seedling nutrition content was relatively low, flowering stage was the highest, and mature stage was lower except for crude fiber. In the early flowering period, the moisture content was 79. 23% ; the crude protein, crude fat, crude fiber contents were 104. 8g/kg, 69. 4g/kg and 82. 6g/kg, respectively; Zn, Fe, Ca value were 23.46mg/kg, 1 160. 60mg/kg, 63.56mg/kg, respectively; β-carotene content was 63.56mg/kg. So, our suggests were the early flowering stage should be the optimal harvest time of edible leaf red perilla, and dehydrated vegetable would be the best way for deuelop- ment.
