摘    要:通过收集和分析近年来我国有关猪肉、猪肝和猪肾中铅、镉和汞的研究资料,总结了我国各地猪肉、猪肝和猪肾中重金属含量与超标情况,并用目标危害系数(THQ)评估了食用猪肉和内脏面摄入重金属的健康风险.资料表明:在数据收集地区猪肉、猪肝和猪肾中镉、铅和汞均有不同程度超标现象,尤其以猪肝和猪肾超标严重;深圳市猪肉镉的THQ大于1,居民食用猪肉存在较高的镉暴露健康风险;其他地区猪肉、猪肝和猪肾中铅、镉和汞THQ值均小于1,通过食用猪肉、猪肝和猪肾摄入的重金属量对人体的健康风险低.

Abstract:In order to understand the heavy metal pollution in pork, pork liver and kidney data of lead, cadmium and mercury is collected. Health risks from pork, liver and kidney are assessed based on the Target Hazard Quotient (THQ). The results show that lead and cadmium content in pork, liver and kidney in some areas is above the standard. THQ of cadmium in pork is above 1 in Shenzhen. People in Shenzhen have a significant health risk of cadmium exposure. The THQ of pork, liver and kidney in other areas is under 1, demonstrating a lower health risk.
