Neotame is a new high-intensity sweetener.It is a derivative of the dipeptide composed of the amino acids aspartic acid and phenylalanine.It is 7000~13000 times as sweet as sugar and 30~60 times as sweet as aspartame.It provides zero calories and has a clean,sweet,sugar-like taste with no undesirable taste characteristic. It is functional in a wide array of beverages and foods and can be used alone or blended with other high-intensity or carbohydrate sweetener.It is stable under dry condition,and has comparable stability to aspartame in aqueous food systems and more stable in neutral pH conditions.
