脂溶性茶多酚抗油脂氧化及其增效剂的研究

摘    要:将茶多酚进行分子化学修饰成脂溶性(LP),具有茶多酚的鉴别特征,且毒副作用低。LTP能明显延长油脂过的诱导期,但从色拉油的POV值和硫代巴比妥酸反应物(TBARM)形成抑制率测定表明,相同重量浓度的LTP的抗氧化能力稍弱于叔丁基对苯二酚(TBHQ)。采用正交设计,发现没食子酸、柠檬酸和LTP具有有协同抗氧化作用,50ppm没食子酸+50ppm柠檬酸+100ppmLTP、100ppmLTP、1200

Abstract:Lipid-soluable tea polyphenols (LTP)which were derivative from tea polyphenols (TP) molecular modification had the same discriminating property as TP.The POV-time curve of oil peroxidation complemented with LTP showed that LTP markedly prolonged the inducing period of oil peroxidation.The POV value and TBARM inhibition of oil showed the antioxidantive effect of tertbutyl hydroquinone (TBHQ) was more strengthened than that of LTP under the same concentration.It was found by an orthogonal test design that LTP had cooperative antioxidation with gallic acid (GA) and citric (CA).The POV value inhibition of 100ppmLTP 50ppmGA 50ppmCA,100ppmmLTP,100ppm TBHQ was respectively 90.6%,65.7% and 92.9% .
