摘    要:中国餐饮业虽已取得了丰硕的成果,但在餐饮业的经营与发展中,传统的厨房管理模式随着时代的进步也显现出许多不足,如观念、管理、质量等问题始终影响着餐饮业的经营,阻碍着餐饮业的发展.只有彻底打破传统的束缚,才能去迎接现代市场的挑战.

Abstract:Although China catering industry has scored great successes, there are still a lot of deficiencies in its management and development. With the time progressing the traditional mode of kitchen management clearly seems to lag behind. For example, the problems with concept,management, quality and etc, affect the business of catering industry and stand in the way of its further development. Only when we smash the trammels of old tradition and exercise the management with a completely new idea, can we meet the challenge coming from modern markets.
